Ingredients :
2 cups cooked basmati rice
1 tsp urad dal
1 tsp mustard seeds
1 /2 tsp cumin seeds
1 tsp channa dal
1 tbs pea nuts
1 tsp cashew nuts
few curry leaves
1-2 dry red chillies
1 -2 slit green chillies
1/2 tsp grated ginger
turmeric powder, a pinch
salt, as needed
1 tbs or more lemon juice
coriander leaves, to garnish
asafoetida, a pinch
2 tsp vegetable oil
Method :
Heat oil in a pan. Splutter mustard seeds and cumin seeds. Add red chillies, channa dal, urad dal, peanuts, cashew nuts, curry leaves and green chillies. Saute them on low to medium flame till nuts turn golden in color. Add a pinch of turmeric powder, asafoetida, grated ginger and lemon juice. Add salt at this time. Now add cooked rice and mix everything well. Garnish with coriander leaves and fresh lemon slices. Serve with raita or pickle.
