Ingredients :
1 cup grated fresh coconut
1 big onion
1 big tomato
1 tbsp tamarind pulp
1 tbsp ginger-garlic paste
1 tsp garam masala
1 tsp coriander and cumin powder
4 boiled and halved eggs
coriander,lemon for garnish
salt to taste, oil to fry
Method :
Fry onion and coconut in little oil till caramelized. Then add chopped tomatoes and ginger-garlic paste. Cool the mixture and grind into fine paste. Add this paste in a deep pan and spice with garam masala, coriander+cumin powders and salt with 1 cup of water. Simmer and bring the curry to boil. Then add the eggs and garnish with coriander and serve hot with rice/roti/bread.
