Ingredients for Usal :
3 cups sprouted - Mataki
1 tbsp gooda/black maharastrian masala powder or as per taste
(Alternately kolhapuri kanda-lasun masala or store bought Garam masala powder can be used )2 Onion thinly sliced (medium size)
1 tbsp ginger garlic paste
1 tbsp red chilli powder or as per taste
1 tsp mustard seeds
1 tsp cummin seeds
1 tsp asefotida(hing)
2 tsp turmeric powder
4-5 currly leaves
1 tsp sugar
Salt as per taste
1 small pc of jaggery
3-4 tbsp oil
Ingredients for Garnishing :
3 medium size Boiled Potatoes (peeled & cut into cubes)
2 cups pohe (Prepare the pohe in tadka and turmeric only) (optional)
2 Onion thinly sliced (medium size)
2 Tomatoes thinly sliced (medium size)
2 cups Farsan Coriander leaves
1/2 cup Grated Coconut
1 Lemon
1 cup dahi/curd/ plain yogurt (optional)
Fresh Pav/ Bread slices
Method for the Usal :
Preparation time : 20 minutes approx
Wash the matki and soak overnight in equal amount of water.
The next morning, drain the water and pour the soaked matki in a clean thin kitchen towel.
Tie it up as a bundle tightly and keep it covered in a vessel in a warm place.
Depending upon the variety of the matki, it will sprout within 8-10 hours.
Now pressure cook the matki and potatoes till soft.
Heat oil in a kadai. Add mustard, cummin, hing and curry leaves.
Once the tadka is ready add the chopped onions, ginger-garlic paste and turmeric and saute till the onions are soft.
Now add the red chilli, black/garam masala and jaggery and mix well.
Add the matki to the kadai saute for few minutes.
Add 2-3 cups water.Bring it to a boil, cook on a low flame for 10 minutes.
To Serve the Misal :
Place sponful of pohe(optional) in a bowl.
Add a couple of spoonfuls of Usal.
Top it with a spoonful of boiled potatoes chivada/pharsan & shev.
Garnish with 1-2 tsp chopped onion, tomato, coriander & fresh curd.)
Add bread/pav on a side dish.
Your Misal Pav is ready to serve.
Please note :
Its best to use sprouted Mataki, Moong, Masoor (any one or two or all) for the Usal.
Do consider the time taken for sprouting as part of the preparation.
Make sure you have a lot of curry for this dish.
